從十二月到一月,當寒意變強,便是製作白蘿蔔乾的時候。將來自宮崎縣的整個白蘿蔔洗乾淨。

 

從十二月到一月這段期間,當寒意變強,將白蘿蔔吊在戶外約兩周使之乾燥。然後用曬乾的鹽、紅辣椒、自家米糠醃漬。此外,米糠糊的另一醃漬過程讓米糠的味道更加豐富、有層次、具特色。

 

雖然液狀調味料裡的醃菜或是一次性的發酵米糠醬菜是主流,但這項產品是用心血製成,需要更多時間完成。

這是道地的 Takuanzuke(醃蘿蔔),有原本的米糠香、天然蔬菜顏色、及溫和的口感,好吃又爽口。加非常微量當作調味料以品嚐食材原本的滋味。
